Help please

I'm looking for two programs and have not had much luck.

1: I'd like a program I can make music on. Something that has all (or most) instraments, that you can either write all the parts useing a plugged in piano, or virtual.

2: Looking for a program that will let me remove the vocal tracks from music.

I'd like "free versions" if possible.

Thanks in advance for any and all information.
