Enable BSOD: Control Panel/Systems, Advanced Tab, hit the Settings button under Startup and Recovery, and under the System Failure area, uncheck the Automatically Restart checkbox.

I know you were looking for inexpensive, but Synology makes great NAS units. The one and two bay units aren't too terribly expensive, but they are truly awesome devices. You can even download iPhone apps to interact with the device. I have the DS410 with 4 x 2 TB drives in it in RAID 5. I've had a disk die in the past and the unit did all the recovery automatically--no input needed from me. You can find a full list of features here.

Very interesting... it would certainly do everything I need it to do.
I'm trying to avoid buying a desktop for the express purpose of acting as a NAS, since it would be inefficient as all hell, but I'm thinking that real data security would require me having two separate 1TB drives, one for the house (NAS) and a second to toss in the car for (theoretically) off-site storage.
Again, inefficient and possibly risky for the drive bouncing around in my car.

My model doesn't have this functionality (it does, just not as simple), but the smaller units (2-bay ones) have what's called a "USB Copy" button. What it does is you plug in a USB hdd to the back of the unit, press the "USB Copy" button on the front of the unit, then it will dump the contents of the unit on to the USB hard drive--making it really, really easy to back it up. Mine is similar, except I have to login to the control panel to back it up.
