If you are gaming at anything less than 1920x1200, or 2560x1600 in most titles, then you havnt even reached what the 4870x2 can do. Big video cards need big resolutions

1920x1200 on my 4870x1 on everything, and no issues at all (aside from the fact that the original MSI card I put in the system when I built it has crapped out, and I had to replace it; now running an XFX )

The performance of i975 is the best in the market and it can be overclocked to 4 gz easily to meet your requirements. On the other hand i7 920 is also good and cheap compare to i7 975.
