It might sometimes help to set the output to composite, instead of s-video or automatic, this worked for me with the 5200 Ultra.
Now I have the same problem again with the GeForce 6600GT, since it has a different input for s-video and composite...

Black and white tv issues when hooking up pc
I've just recently tried this and have had the same problem many others have faced, i also found the solution,
My Graphics card is a geforce 7950 gt (BFG) The main problem with these cards is that its giving out HDTV(fools) The only way to get round this, is to have the proper ports on your tv! Either Svid port or monitor port, no crappy tv without these will handle it, and you can try any cable you like, Your gona get Black and white picture.

Another possible solution
I dont know if anyone else has tried this or not. But I had the same problem of having only black and white on the tv from being hooked to the computer through an S-video cable. and there was settings through the Nvidia setup to adjust brightness and contrast and there was a slider for "Saturation" It was set at 0 and as soon as I slide it up. I had color on the TV screen. Hope this helps someone out there.
