there is very little out there that is actually a good replacement, i used to use idump to move music files off of my ipod, i believe that the pro version can also put junk back onto the ipod in a way that the ipod understands (as long as its in hard drive mode)
i havent got an itouch so i cant say whether it will work of not... sorry
